April Wine Spotlight: Champagne (French the real deal!)

This post is about the perfect marriage of 2 things that I adore - French Champagne and Spicy Ahi Poke. Yes I say French Champagne because not everyone knows that you can’t call it champagne unless it is from Champagne France, so I say French Champagne b/c I don’t drink American Bubbles.
I most adore Spicy Ahi Poke with a Brut Rose from France but a regular Champagne get’s the job done too.
The crispness of the Champagne with the heat of the siracha aioli pair so well together I crave it. So when in Hawaii or at home, I must talk myself into eating other things regularly.
For those who read this and say, “But Wen doesn’t drink anything but red wine, bourbon and calls Tequila her white wine”. You aren’t wrong. But when I was in France a couple years back, we went to the adorable and delicious town of Beaune, yep Wen went to Europe’s Pinot Land… and Wen does not like Pinot. Sooo when you are in France Pinot land, and you don’t like it - you drink A LOT OF champagne and I mean A LOT!
Raw fish is not your thing that is ok. Champagne pairs well with all sorts of things if you ask me. Popcorn is a fan favorite along with anything with some salt like cheese & some kettle chips for example.
Whatever your fancy, I am here to tell you that Champagne shouldn’t be seen as just for a special occasion. I believe you should have a few wines (red, white, or champagne) that you have marked to pop open on a special occasion but that shouldn’t stop you from drinking the other wines with a great pairing. Because of that I give you 2 of my go to Champagne bottles. My drink anytime is a bottle of Jacques Bardelot & my special occasion bottle is Veuve Clicquot both Brut* Champagnes. (*wine term tip: Brut means dry as no residual sugar is left after fermentation)


I am not here to get into a throwdown on what Champagne is best or why you should choose one over the other. Regardless of the bottle, if you like it, are comfortable with the price than drink it. The more you drink different things and learn what you like and what you don’t like the more your tastes develop. Don’t be afraid to try something new - you may just like it.

PSA: I beg of you all to stop sabering expensive bubbles, opening a bottle with a good pop and no damage to you or your ceiling is impressive enough.
